Mr. Yuichiro Otsuka developed a technique to make sake from wood. Generally, wood is used in alcohol production when distilled alcohol, such as whiskey, is aged and stored in wooden barrels, but Mr. Otsuka uses the wood itself to make sake. He successfully created wood-sake by crushing wood finely until it reached a cream-like consistency, adding enzymes and yeast, and distilling it. Mr. Otsuka states that he aims to add new value to Japan’s wood and forestry industry and enhance it through this initiative. What kind of future does he envision?
